Easy King Prawn Spaghetti Recipe

This weeks recipe is one of my favourite quick easy meals, although it’s not exactly that cheap as king prawns are quite expensive, but when I made this last week I’d picked these prawns up for £1.99 as they were reduced. They were fresh and I had originally decided to freeze them but then when time wasn’t on my side I used them to rustle up a tasty, filling and very quick dinner for myself. I love king prawns so much, I love them in Chinese food, Thai food, in a creamy garlic sauce with fresh bread a la Bee, but I love them most in pasta or risotto dishes. In case you hadn’t guessed from some of my other recipes, spaghetti is my favourite pasta, even if it’s really messy to eat, I just find it’s not as heavy as other pastas so I use it at least once a week in cooking.

Anyway, here is the recipe before I bore you all with anymore chat. I know a lot of you do only come here for the food, not my mindless rambling!

Ingredients
Serves Two
200g of Spaghetti
200g Fresh Prawns
2 tbsp Chili Infused Oil
2 tsp Coriander (Dry or Fresh Works)
14 Plum Tomatoes
2 Shallots
2 Cloves Garlic
3 tbsp Double Cream
1 tbsp Tomato Puree
Salts & Pepper to taste

What You Need
Bowl, Table Spoon, Tea Spoon, Knife, Chopping Board, Garlic Press, Colander, Cling Film, Large Pan, Frying Pan

  1. Quarter the plum tomatoes and dice the shallots, place into a bowl with the prawns. Add the chili oil, coriander and garlic and stir until everything is covered. Cover with cling film and put into the fridge for 1 to 2 hours to marinate.
  2. Once the prawns of marinated, cook the spaghetti according to the packet. I always leave mine a little bit longer as I prefer it soft rather than al dente.
  3. In a frying pan add the prawn mix and cook until the onion and tomatoes are soft.
  4. Add the double cream and the tomato puree and stir until everything is combined.
  5. Drain the pasta then toss in the prawns, ensuring the spaghetti is well coated.
  6. Season with salt and pepper then serve.
I didn’t get this recipe from any book, I just made it up from ingredients that I know go well together. If you like it spicy you can add extra chilli, paprika or even some chopped peppers and it does work with all kinds of pasta. You could even swap the prawns for chicken or add some chorizo. The only thing missing for me was a handful of peppery rocket on the top when serving.
